I've been sharpening for decades - why? I own several expensive Japanese knives and couldn't find anyone to sharpen them properly. So I bought an EdgePro Apex (manual sharpener with water stones) and started sharpening my own.

 

Neighbors asked me to sharpen their knives, and when the volume was too great to sharpen manually, I spent a few thousand dollars to buy a Tormek T-8 sharpening system. The Tormek has tooling to sharpen many things including scissors, but its not made for convex-edge hairdressing shears.
